Wild Garlic Pesto
For the foraging enthusiast, the abundance of wild garlic marks the season of scavenger sustenance.
There is great satisfaction in nourishing your body with foods from the wild. The hunter, gatherer instinct in human evolution still evokes a sense of independence and freedom.
You can find field garlic in the wild; wooded areas, disturbed soil and home gardens. Wild garlic is said to be a strong body cleanser through detoxification.
It is also known to push the inducement of cancer cell death, thereby lowering your risk of suffering from cancer.
Wild garlic can be frozen to preserve its freshness and nutrients. Simply, wash and dry and place in a freezer bag and freeze.
On top of this, in the pesto recipe, it is just the leaves; but leaves, stems and the beautiful little white flowers are all edible and great in salads.

- 300g Wild Garlic
- 1/2 Lemon
- 50g Parmesan
- 1 Garlic Clove
- 150ml Olive Oil
- 50g Walnuts
- Start by washing the wild garlic, loosely tear it up and add to the blender.
- Add lemon juice, grated parmesan, garlic clove and 3/4 of the olive oil and simply blend for up to 20 seconds, until all chunks are gone.
- Add the walnuts and blend again to the consistency you prefer. 5 seconds will give you a textured finish; the longer, the smoother.
- Finally add the last of the oil, and stir in, to get a classic pesto consistency.
