Why is Salmon good for you?

Salmon contains Omega-3 fatty acids, which are known for their anti-inflammatory properties and aid to chronic diseases. Omega-3s are found all other fatty fish, e.g. trout, but can also be found in seeds (chia/linseeds) and nuts!

Why are citrus fruits good for you?

Citrus fruits like grapefruit and lime are known for their high levels of vitamin C. Phytochemical’s such as polyphenols are found, which are known to significantly reduce the risk of many cancers. For more fibre and less sugar, eat the whole fruit, not just the juice.

INGREDIENTS

For the Gravlax

250g/9oz Salmon fillet (skinned) 

2 tbsp Salt, flaked

1 tbsp Red chillies

75ml/3fl oz Pink grapefruit juice

1 tbsp Lime zest

150ml/5fl oz Lime juice (about 5 limes)

20g Honey (originally caster sugar)Handful (m) Coriander leaves, finely chopped

For the salad

1 Fennel bulb finely sliced

Handful Baby seasonal leaves. In January February time pink radicchio is such a treat and looks heavenly. 

METHOD

  1. For the ceviche, lightly sprinkle the salmon fillet with salt. Transfer to the fridge and leave for 20 minutes.
  2. Remove the salmon from the fridge, carefully rinse off all the salt and pat it dry.
  3. Finely slice the chillies, grate 1 tbsp of lime zest and then juice the limes; mix them in a small bowl with the grapefruit juice and honey. Add the coriander at the last minute and toss to combine.
  4. Slice the salmon at an angle – each piece needs to be about 2-3mm thick.
  5. Spoon all but two tablespoons of the ceviche dressing over the salmon, and set aside for 30 minutes.
  6. For the salad, finely slice the fennel and soak it in iced water for 2-3 minutes, before removing and draining. 
  7. Mix the salad leaves and the reserved two tablespoons of the ceviche dressing.
  8. Place the salad leaves around the salmon and serve.
